Lightly caramelised leek, smoked Spanish chorizo, feta cheese and sweet potato give this quiche beautifully balanced flavours of savoury and sweet. I loved how the smokiness of the chorizo sausage oozed through and blended with the rest of the flavours. The tangy saltiness of the feta was an ideal compliment to the sweetness of sweet potato and was the real stellar of this quiche.
Ideal for a morning tea or brunch.
Cooking and preparation time 1 hour 20 minutes
2 tbsp olive oil
1 leek white part, thinly sliced
1-2 garlic cloves, crushed
1 bunch silverbeet, hard stems removed
60g smoked Spanish chorizo sausage, thinly sliced
2-3 potatoes, thinly sliced using a mandoline
1 medium size sweet potato thinly sliced
Olive oil spray ( see method – 3 )
300 ml whipping cream
Salt and pepper to taste
Basil leaves for garnish
- Preheat oven to 180C
Prepare a lightly oiled solid tart dish
- Heat oil in a frying pan over a medium heat, then add leek and garlic. Sauté for a few minutes until fragrant and lightly browned. Roughly tear silverbeet leaves and add them to the leek and cook stirring till silverbeet has wilted and juices have evaporated about 5-7 minutes.
- Lightly oil a tart dish ( for this method I recommend using a pan or a dish with a solid bottom to avoid seeping of the egg mixture ). Line the bottom and the sides of the dish with potato slices. Spray to coat arranged potato slices with olive oil or toss potatoes in olive oil prior arranging if olive oil spray isn’t available.
- In a large bowl mix eggs and cream. Season to taste with salt and pepper. Add potatoes, leek and silverbeet. Mix well making sure most of the potato slices are separated, then pour half of the mixture into the potato-lined tart pan. Arrange chorizo slices over the top, then pour the rest of the potato mixture to cover the sausage slices.
- Crumble the feta cheese over the top and bake in the preheated oven for 45 minutes or till cooked through.
To prevent from over-browning of the feta cheese, cover the quiche with a sheet of baking paper after first 15 minutes in the oven.
