Made with the just almond meal ( ground almonds ), icing sugar, egg whites and flavoured essence these biscuits are beautiful to look at, delicious to eat and make a wonderful foodie gift.
I have made them in a few different flavours – almond essence, rose water and orange flavoured where I used grated orange rind. They all are equally heavenly to taste.
For the rose flavoured biscuits, I coloured icing sugar a very light pink by adding a tiny drop of natural pink colour to it and mixing it well with a spoon, then sieving it a couple of times to get the colour even. They looked beautiful.
Ingredients
For almond essence flavoured
250g almond meal ( ground almonds )
200g icing sugar and extra for dusting
2 large egg whites
1-2 tsp almond essence ( depending on how stronger flavour you prefer )
For rose water flavoured
250g almond meal ( ground almonds )
200g icing sugar and extra for dusting+tiny drop pink colouring
2 large egg whites
Natural pink colouring – small drop
1-2 tsp almond essence ( depending on how stronger flavour you prefer )
Method
Almond essence flavoured
Preheat oven to 160C.
Line a baking tray with baking paper.
In a large bowl mix icing sugar with egg whites, add almond essence and almond meal mix till forms a soft cookie dough. Form into a small 30g crescent shapes. Bake for 15 minutes or till lightly golden. Remove from oven and move to a cooling rack. Cool and coat with icing sugar.
Rose water flavoured
Preheat oven to 160C.
Line a baking tray with baking paper.
In a large bowl mix icing sugar with egg whites, add rose water flavouring, a small drop of pink colouring and almond meal mix till forms a soft cookie dough. Form into a small 30g crescent shapes. Bake for 15 minutes or till lightly golden. Remove from oven and move to a cooling rack. Cool and coat with pink coloured icing sugar.
Add a tiny drop of pink food colour to 1 cup of icing sugar, mix well and sieve at least once to get the colour even. Store in an airtight jar or container.
To make orange flavoured biscuits follow the same steps as for the above but omit essence or flavouring instead add grated zest of one orange or if you prefer stronger orange flavour add natural orange flavouring. Shape and bake biscuits same as above. Dust with icing sugar once cooled.
