I’m tucking into one right now as I’m writing this recipe out and nom-nom it’s delicious.
Usually, I would make them with raisins or sultanas, but today they are with a mixture of white and dark chocolate chips as per my daughter’s request, she loves anything chocolate and so do I.
1 cup traditional oats
1 cup self-raising flour
3/4 cup raw sugar ( I used organic raw sugar )
1-2 tsp ground cinnamon or all spice
1/2 cup raisins ( can use sultanas, cranberries or chocolate chips )
100g butter room temperature
1 tsp vanilla essence
Preheat oven to 170-175C fan forced ( ovens vary. If your cookies brown too fast adjust temperature to lower )
Line a baking tray with baking paper
In a bowl mix all dry ingredients together, then add butter, egg, milk and essence. Mix well into a soft dough.
Roll 12 balls out of the dough, each about 50g in weight. Place them on a baking tray and slightly flatten by gently pressing with the inside of your palm. Bake for 15-20 minutes or till golden. Cool on a cooling rack, then enjoy with a good cuppa 🙂
Ahhhh, it’s a perfect time to relax. Life is good when you have a good cookie to have with your cuppa 🙂
